There were no giant scissors at the grand opening of Fogo de Chão Brazilian Steakhouse in Rancho Cucamonga in late October.

Instead, the ceremonial ribbon cutting was done with a churrasco serving knife.

Fogo de Chão is a Brazilian-style barbecue restaurant specializing in meats that are slow-roasted over an open flame in view of the dining room.

It made its U.S. debut in Dallas in 1997 and arrived in Southern California in 2005 when it opened a restaurant in Beverly Hills. It now has several locations in Los Angeles and Orange counties. The Rancho Cucamonga restaurant, at 12240 Foothill Blvd near Victoria Gardens, is the chain’s first in the Inland Empire.

With prices for churrasco starting around $53, Fogo de Chão is a splurge. But meat lovers might find it a satisfying special event.

Here’s how the menu works.

The Full Churrasco will bring a continuous stream of food servers to your table offering you various cuts of meat they will shave off a spit. You will use tongs to transport the meat to your plate. Selections include bone-in rib eye, top sirloin, lamb chops and roasted chicken. Prices are currently $53 per person for lunch, $73 for dinner and $57 for Sunday lunch, according to the restaurant’s automated phone system.

The Indulgent Churrasco, $73-$93, comes with an “enhancement” such as lobster tail or crab cake plus dessert. Choices include Cheesecake Brùlée and Chocolate Molten Cake, priced $11.50-$13.25 a la carte.

The meal includes Market Table, a buffet that runs the length of the grill. It features a wide variety of vegetables, salads, meats, cheeses and specialties such as Fogo Feijoada, a black bean stew over rice.

Customers can also order family-style cuts of meat for their tables, such as 36-ounce dry-aged tomahawk ancho for $130.

If you want to skip the churrasco, entrées such as Chilean sea bass, pan-seared salmon and cauliflower steak cost $23-$35, with the Market Table as an add-on for $18.

Fogo de Chão has a full bar with a wide choice of wines, beers and cocktails.

It doesn’t have a dress code, but recommends smart casual attire.

Hours are 11:30 a.m.-9 p.m. Sunday, 11:30 a.m.-10 p.m. Monday through Thursday, and 11:30 a.m.-10:30 p.m. Friday and Saturday.
